Lock Up Your Bacon, The Pancakes Are Coming….

Man oh man. When I first saw a tweet by @justforfunhmn with the words bacon and pancakes in it I just about lost it. I knew right away that sometime soon, those bacon pancakes would soon be in my belly. This is the post that was tweeted that inspired all this.

I ended up making these at midnight cause the hubs and his buddy were famished from all the music and jamming they were doing. What better a snack than this?!?!

I didnt exactly want to fry up fresh bacon and then fry the pancakes in the bacon fat… I mean, I LOVE bacon, but I sure as hell want to minimize the amount of artery clogging I was about to do ;) So, I got a box of the pre-cooked bacon. It worked wonderfully!

Also, I probably should have added more milk to the batter instead of just what it called for. My batter was pretty thick so I had to contend with over crisping the bacon or under cooking the pancakes :) But all in all, they were DEELISH!!!!! I’ll let the pics speak for themselves ;)

My Fave Salad Ever

My friend Sue brought a salad to a potluck that I completely fell in love with. I wanted to make the same salad but I didn’t have the exact same ingredients as her so I did some experimenting. The result… is now my favorite salad of all time.

It’s really easy to make. Basically, it’s a baby spinach salad with sliced almonds, walnuts – any kind of nuts you like will do. Pine nuts are really yummy in this too. Then, dried cranberries, thinly sliced pears (I add mango sometimes too) and I use any kind of shredded cheese I have in the fridge. I’ve used gouda, mozzarella, cheddar and goat cheese… it’s all good :)

The kicker is the dressing. I mince 2-3 pieces of fresh garlic, now I LOVE garlic, so please use to taste… then I put it in a bowl with olive oil and balsamic vinegar. I eyeball how much I use of those, so again, to your taste. My secret (I’m sure it’s not so secret) is brown sugar. I slowly start adding brown sugar and stirring it so it dissolves. I keep adding brown sugar until the dressing starts to thicken up.

Next, you drizzle some of the dressing on the salad, toss, and voila!!! My fave salad ever.

I usually hate salad but this salad, well, I’ve eaten a very large (enough for 5 people) worth of it once. It’s so refreshing. Nom.

Cadbury Mini Eggs Short Bread Cookies

Yes, you read that right…. I couldn’t believe my eyes when my friend Lucky tweeted about these little delicious morsels. I knew right away I had to make them. I even told her that I would ship her some! :) I mean how could I not? She is after all my “supplier”!

I headed on over to my local grocery store to stock up on some flour, butter, icing sugar, etc…. OH and Cadbury Mini Eggs!!!!
