Castonitis

I’m really sad to inform you all that I’ve developed a bad case of castonitis. I’ve managed to cast on more projects than I can realistically knit (again). I thought I was rid of this condition after my marathon Christmas knitting… but alas… it’s back to bite me in the ass.

I was doing fine, knitting away on my mom’s Travelling Woman Shawl and my Brother’s Bday socks. I then decided it would be a good idea to cast on for a little cardigan for Madison. Those 3 project were borderline manageable. I then had the brilliant idea of knitting a toy for my friends son who’s turning one a week before Madison. I’m now beyond full capacity with my knitting. It’s actually starting to stress me out. Let me tell you why…..

Here’s the progress on Madison’s little cardigan jacket thingie:

I actually started on the other half of the front last night and have about an inch and a half done on that. I finished this half at our friends house on the weekend and forgot my stitch holders at home. My inner McGuyver came through and I asked for a BBQ skewer :) Worked AWESOMELY!!! So when in a pinch… you now know what to do ;)

I’m knitting the 18 month size because when I cast on she was still wearing her 12mo stuff. Well, Since then, she’s gone through a growth spurt and is now in 18mo stuff. Granted, they’re a little big still… but I’m still panicking that by the time I’m done… she will have outgrown it :(

My brother’s socks. Man, I was doing soooooo well and then I hit a snag. When I was working on the gusset of the first sock I thought that something wasnt right. The decreases didn’t look quite right. But, I kept going and cast on for the second sock. When I got to the gusset decreases of the second sock, I realized that I needed more decrease rows to get to the right amount of stitches. I wondered if maybe I hadn’t marked all my rows down from the second sock… and then…. I figured it out. Instead of working one decrease row and one even row all around, I worked a decrease on every row. Not only that… they were uneven decreases! How the hell I managed to do that is beyond me. I’m going to attribute it to lack of sleep. You can see here that the gusset decreases aren’t the same at all.

One is nice and neat and swoops properly along the foot while the other… doesn’t. I’m gonna have to frog the first sock which is going to break my heart. So much for trying to get 2 pairs of socks done for him :( Luckily I’m almost done the second sock.

I’m still slowly chugging along on my mom’s shawl (pic at the bottom of this post). I kinda left it the side for now so I could get Madison’s jacket done as well as the toy I cast on for my friends son. I would love to post pics and tell you what toy it is… but his mom is now wise to my blog and I want it to be a surprise :) I can tell you though that it’s another Rebecca Danger design :)

So to you my knitty/crafty friends… I bid you adieu. I’m off to feverishly knit some more so I can get some FO’s done :)

The Rise of Lil’ G – My Friend Jasin Rules

My Friend Jasin Rules. That’s just the way it is. I’m so super excited for him and had to dedicate a post to him :) We met a few years back during the Nissan Cube Contest in which we won cars. That’s a whole other story but in a nutshell, Nissan gave away 50 Nissan Cubes and I won one! yay!!! That’s where I met Jasin and a bunch of other super awesome people.

I Want Candy

This morning I woke up thinking of those old garbage pail candies. Remember those? I used to LOVE collecting the little garbage pails and lining them all up on my dresser.

I remember eating all the little coke bottles first then the fish :) And speaking of garbage, we can’t forget the Garbage Pail Kids! Man, my headboard was littered with these stickers! They were so gross and funny.

I’m pretty sure now a days… you would NEVER get away with making candy/toys for kids like that ;) But they were sooooo awesome! The grosser the better and more collectible to me .

And just to round things off… I ate these like they were vitamins (I still do) I LOVE these mounds of what they call marshmallow covered in the delicious red sugar. mmmmm soooooo goooooood!

And last but not least, another staple in my candy diet when I was a kid…..

TAFFY! I LOVED the one one that had chocolate, vanilla and strawberry. mmmmmm I know you can still buy these but I try to purposely not seek them out. I sure as hell don’t need more sugar in my life :)

My Infamous Mexican Rice with Chicken

I’ve been meaning to post this recipe for a while now. It’s infamous because anyone who tastes it, is robbed of their will to be able to say no to it :) This recipe can very easily be a vegetarian dish just by omitting the chicken. My recipe makes A LOT of this. When I make it, I usually have enough for dinner, lunch then dinner again for the hubs and I. This rice is also good when wrapped in a burrito. So without further adieu… the secrets of my infamous Mexican Rice.

Mexican Rice

INGREDIENTS

1.5 cups of brown rice
1 bunch of green onions
3 medium tomatoes
1 can of corn
1 can of black beans
2 regular sized chicken breasts
3 packets of Taco Seasoning
1 pack of shredded Tex-Mex cheese
1-1.5 cups of Ranch Dressing

DIRECTIONS

Get a pot big enough to immerse the chicken in liquid and add enough water to cover the chicken. Add 1.5 packets of the Taco Seasoning and bring to a boil. Add your chicken breasts and lower the heat to a simmer.

Cook your rice according to the directions on your package. I usually add a little more water because I don’t like my rice crunchy ;) Add the remaining 1.5 packets of Taco Seasoning to the water and let the rice cook until all the liquid has been absorbed. Once this is done, the chicken will be ready too. Remove the chicken onto a plate to cool and fluff the rice and let it cool.

Dice the tomatoes and add to a large bowl. Chop the green onions and add to the bowl. Next, drain and rinse the beans and corn and also add to the bowl. If the chicken has cooled enough to handle, then shred the chicken with your hands into small pieces/strands. Shredding the chicken by hand works much better than chopping. The texture is much better.

Once all your chicken is shredded, add the rice to the bowl. Next, you add your cheese. I use the whole bag because I like it really cheesy. Its up to you how much you use, but I would at the very least, use half the bag. Last, you add your Ranch Dressing. Start with half a cup and keep adding until it’s to your taste. I like it saucy but not soupy. I add about a cup and a bit of dressing to mine.

Your rice is ready to serve, BUT if you nuke it… it’s gets all gooey and cheesy and yummy. That’s my favorite way to eat it.
